Seychelles staple foods include fish and seafood as it is an archipelago country. And the fresher the seafood, the BETTER! Seafood seasonings are slightly different, but in general you will find a combination of chilies, ginger, garlic and a little lime juice.

5. Curry

In Seychelles, curry is used to designate an assortment of dishes that constitute a complete meal, a mixture of vegetables, fish and seafood, chicken and pork, up to the ultimate star of the local gastronomy: the civet de chauve souris, a Curry made with a flying mammal that feeds on fruits, and has a taste similar to rabbit.

Breadfruit chips are made for vegetarians. Breadfruit is a type of tropical fruit that is abundantly available on the island. Creoles consume the versatile fruit in various forms, one of which is breadfruit chips.

7. Ladob

Ladob is a Seychellois staple that can be eaten as a savory or sweet dish. Sweet ladob is made with sweet potatoes, ripe plantains, coconut milk, nutmeg, sugar and vanilla. In the savory version, the sugar and vanilla are swapped for salt and salted fish is added.

8. Pulao

This rice is very typical of Indian food and the perfect accompaniment to the delicious curries of this cuisine. It is a very light rice with a touch of spices and can have vegetables. In Seychelles, meat or fish is often added to this dish.

9. Roussettes

One of the most unusual and unique dishes of Seychelles, civet de chauve souris consists of fruit bats in curry. This bat curry is usually made with peeled fruit bat pieces, marinated in vinegar and red wine and then cooked with various herbs and spices. Battermouse curry is usually served in restaurants that serve authentic local dishes.

10. Shark Chutney

Also known as Chatini Rekin, it is frequently served as a snack. This Seychellois delight is prepared by boiling and mincing shark meat, served with lemon juice, salt, pepper, fried onion, curcuma and the country’s signature fruit with a very strong flavor: bilimbi.
