TOP 10 Traditional Guinean Foods

The following highlights some of the popular Traditional Guinean Foods. If you manage to be in an Guinean restaurant or you are visiting Guinea, I recommend the following

1. Yassa Chicken

It is chicken with lemon, pepper and onions. The chicken is marinated with the onions, garlic, lemon, mustard and chili. Then the meat, onions and the remaining juice are separated to caramelize the onions on one side and fry or grill the chicken on the other. Finally, put everything back in the pan to finish cooking and serve with rice or couscous for a super tasty meal.

2. Patates

Guinea has a variety of dishes and delicacies, including the popular sweet potato fries. Known as patates in Guinean cuisine, fried sweet potatoes are more popular than potatoes and are most often used to make Chips.

3. Ginger Drink

Ginger beer is a carbonated soft drink. It is perfumed and subtly enhanced by the “spicy” taste of ginger, delicately sweet and very refreshing. Ginger beer is traditionally a homemade drink.

4. FouFou

This is a kind of mashed dough-like consistency, made from a mixture of sweet potato and other starchy vegetables with hot water. The way to eat it is to break the contents of any of these dishes into pieces and scoop up a portion of fufu.

5. Groundnut Sauce

Authentic West African preparation requires crushing the ingredients by hand until the mixture is fairly uniform; a food processor also works. Peanut sauce is a very traditional food in Equatorial Guinea that is served piping hot and is typical of family and friends gatherings.

6. Cassava Leaf Sauce

Also known as saka saka or pondu, it is a simple and delicious soup that is common in many parts of Africa. This exotic tapioca leaf soup is not really a soup but a stew. It can be made with any meat or fish.

7. Jollof Rice

Jollof rice is one of the most popular dishes in West Africa. It consists of rice with tomatoes, onions, peppers, chili and spices and can be served with chicken, beef, eggs, turkey or fish. It is quite a festive meal. Its presence is not limited to Christmas celebrations, but is also served at weddings, birthdays and baby showers.

8. Fried Plantain

This is a dish made in places from West Africa to East Africa where plantains are grown. A common practice is to slice the plantain, fry it until it turns yellow, mash it between two plates and fry it again.

9. Potato Leaf Sauce

It is usually served with rice, and all regions of the country may add some additional ingredients. It requires ingredients such as chicken, red palm oil, fresh red African fimbrias (similar to habaneros) and onions, but its main ingredient is sweet potato leaves.

10. Smoked Fish

The production process of smoked fish consists of salting the product with a natural salt and sugar mixture, as well as drying and smoking. Smoked fish has a delicate taste that melts on the palate.
