TOP 10 Traditional Malagasy Foods

The following highlights some of the popular Traditional Malagasy Foods. If you manage to be in an Malagasy restaurant or you are visiting Madagascar, I recommend the following

1. Fish in Coconut Sauce

A very important food in coastal areas. Cooking the huge freshly caught fish with the coconut sauce gives it a wonderful tropical touch.

2. Romazava

It is made from very small minced meat, usually from zebu. It is mixed with tomatoes, onions, ginger and slightly spicy watercress and its flowers. Finally, bring it down to a simmer and you have a rich stew to go with the usual rice. This is also a famous dish from Madagascar.

3. Lasopy

It is a vegetable soup commonly eaten in the country. Surprisingly, the resulting (and very rich) broth is the broth that is then used to cook rice and pasta. The result is that they encompass all the flavors of the soup and are delicious.

4. Mofo Gasy

These are millet pancakes that are common at street stalls for breakfast or snacks. Mofo originals are made with rice flour and hot water. The batter is fried and is delicious when eaten hot and crispy.

5. Eel (Amalona)

It is a fairly common dish in some parts of Madagascar. These are fish, eels, usually freshly caught. It is combined with pork stew seasoned with spring onion, tomato, cabbage and chili. The eel can be a bit tough, but the stew was really original.

6. Sesika

This is Madagascar’s version of black pudding. The ingredients are the same. Blood and fat, usually pork, with a country flavor. Tasty, but it is recommended to pay special attention to the origin, as it does not always give a guarantee.

7. Akoho

It is a delicious chicken stew in coconut milk flavored with tomato, onion, garlic and ginger. The flavor resembles a mild curry and is very tasty and popular in Madagascar.

8. Koba

A dessert that can be found in street stalls and festive markets. The first impression is of a log wrapped in banana leaves. You can find cakes made with rice flour, peanuts, brown sugar or honey and pistachios. A great dessert for strolling among the market stalls.

9. Ravitoto

Most restaurants have this traditional dish. It means something like “mashed cassava” and indicates what the base is. This is a dish of zebu or pork (depending on preference) mixed with cassava leaves. Depending on the region, ginger or some other typical sauce is added, but it is always served with rice.

10. Hen'omby Ritra

One of the ways to make zebu stew. In this case, the sauce is made with garlic, ginger and various vegetables. And no tomatoes. Think of it as a stew, the sauce is thick and not too rich. Complete and, most importantly, delicious.
